Named for their shape, the onion squash is a winter variety well known for its distinctive chestnut flavour. Smoother than the typical butternut squash, the onion squash has a lovely white flesh, which is sweet and full-flavoured. The versatile squash lends itself well to velvety soups, stews, risotto and casseroles.
