The Cornish Cheese Company was founded in 2001. Philip and Carol Stansfield diversified their dairy business and learnt to make cheese. Now they are an award winning producer with an extensive range of cheese.
This month, in our Blockbuster Magazine, we feature their Cornish Cheddar.
This Cornish Cheddar is exquisitely intense yet rounded extra mature cheddar with a smooth, creamy texture. Designed to deliver a slightly crunchy texture; this is due to the formation of naturally occurring calcium lactate crystals which are found in high quality aged cheddars. These appear as white flecks, developing further as the cheese matures, enhancing both the character and the mouthfeel of the cheese.
